Chongqing eats louder than Chengdu. The city is steep, humid, neon at night, and very serious about chili, peppercorn, and oil. The trick is not to avoid spice completely, but to pace it. Start with xiaomian
Chongqing xiaomian is a breakfast classic. Ask for less chili if needed, but expect sesame, garlic, scallion, chili, and numbing pepper.
Pick noodles or sour-spicy starch noodles
Wanzamian and suanlafen are quick, cheap, and easy to find near transport hubs and shopping streets.
Choose hotpot or jianghu dishes
Hotpot is the obvious choice, but grilled fish, spicy chicken, mao xue wang, and river-style fish dishes are just as local.
Cool down after dark
Ice rice balls and tangyuan are useful after a spicy meal, especially around busy night areas.

- 微辣 in Chongqing can still be hot. If you are unsure, ask for 少辣 or choose a split pot.
- Hotpot portions add up fast. Order fewer meat plates first, then add more.
- Jianghu dishes are often oily and salty by design. Balance them with vegetables and rice.
- Do not trust English menu spice icons alone; ask staff directly or show the Chinese phrase.
